Everyone knows that the YMCA is one of the best places to go to for staying fit. Who knew that the YMCA in Naples is also a shrine to one of the best culinary workouts you will ever experience?
Recently, I had the privilege of attending The Naples YMCA’s Beyond the Plate dining series. Offered monthly, the dinners are created and hosted by a leading chef in the Y’s state of the art culinary kitchen. Classes are led by Executive Chefs from the American Culinary Federation Caxambas Chapter of Naples & Marco Island (ACF).
The evening started in the Y’s lobby with flavor packed passed hors d’oeuvres that gave the 24 guests an indication of what was in store. We mingled with heightened anticipation of the evening ahead. Special thanks to the ultra-talented, Tori Thrift, a youth member at the Y, whose exquisite piano skills were enjoyed by all.
Soon we were escorted into the Y’s spectacular open test kitchen. Attention Food Network: This kitchen beats anything I have ever seen on your network.
On this particular evening, Chef Brian Roland of Crave Culinaire was the host. His dinner was creative, imaginative, delicious and decadent. What was particularly impressive is that the entire meal was designed to be healthy and nutritious.
Chef Brian explained that his menu was inspired by fresh ingredients. Every course presented at this extraordinary dinner was a feast for the eyes and my tastebuds. I will admit, and proudly, that I ate just about everything that was on the menu. I hate tea, but Chef Brian’s green tea infused chicken was sensational!
One of the most memorable courses was the dessert which was a fruit sorbet made right before our eyes with liquid nitrogen.

The next gourmet experience will be on July 22, 2017 and will be prepared by Executive Chef Paul Palmer of Pelican Isle Yacht Club. This dinner will also be paired with wines from Naples Wine Collection.
